Butter: sticks, cups and tablespoons to grams

US butter comes in sticks: 1 stick weighs 113 g (4 oz) and equals ½ cup or 8 tablespoons. The wrapper usually has tablespoon marks, which is why so many US recipes measure butter in sticks and tablespoons rather than cups.

Quick rule

1 stick = 113 g, often rounded to 115 g. 2 sticks = 1 cup = 227 g, often rounded to 225 g, which is also about half a standard 250 g block.

Salted or unsalted?

Most US baking recipes use unsalted butter and add salt separately. If you only have salted, reduce the added salt by about ¼ teaspoon per stick.

European butter

Butter in Europe and the UK often has slightly more fat (82% or more) than standard US butter (80%). The difference rarely matters, though very rich butter can make cookies spread a little more.

Weights are for a level US cup (236.6 ml), spooned in, based on published baking ingredient-weight charts. Weighing will always be more accurate than any cup.
