Why convert cups to grams?

US recipes measure by volume, but a cup of flour and a cup of sugar weigh very different amounts, and how you fill the cup changes the result. Metric recipes weigh dry ingredients instead, which is more accurate and means fewer things to wash. Our calculator uses a weight for each of more than 160 ingredients, so 1 cup of flour becomes 120 g, not 237 ml.
