Cake flour is finely milled, low-protein flour that gives US layer cakes their soft, tender crumb. A spooned-and-levelled cup of supermarket cake flour weighs about 114 g.

For each cup of cake flour, measure 1 cup of all-purpose (plain) flour, remove 2 tablespoons, and add 2 tablespoons of cornstarch (cornflour in the UK). Sift together twice. By weight that is roughly 105 g plain flour plus 15 g cornflour.

UK "sponge flour"

Some UK mills sell a fine sponge flour that works well in place of cake flour. Check whether it is self-raising before you use it.
