Cocoa powder: cups to grams
Unsweetened cocoa powder is very light: a cup weighs only about 84 g, and a tablespoon about 5 g. It clumps easily, so sift or whisk it with the dry ingredients.

Natural or Dutch-process?
Both weigh the same per cup, but they react differently. Natural cocoa is acidic and often paired with baking soda; Dutch-process cocoa is alkalised and usually paired with baking powder. Use what the recipe asks for when you can.
Not drinking chocolate
Hot chocolate mix contains sugar and milk powder, so it cannot replace cocoa powder in baking.
