US recipes weigh meat, cheese, chocolate and canned goods in ounces and pounds. Here are the gram equivalents, and why ounces and fluid ounces aren't the same.

Ounces or fluid ounces?
An ounce (oz) is a weight; a fluid ounce (fl oz) is a volume. For water and milk they are nearly the same, since 1 fl oz is 29.6 ml and weighs about 30 g. For anything else they can be very different: 8 fl oz of flour weighs only about 120 g. When a US recipe says "8 oz" of a liquid like milk or broth, it means fluid ounces, about 235 ml.
Common US can and package sizes
US cans are labelled in ounces. The nearest metric can is usually close enough: a 400 g can of tomatoes works where a recipe asks for a 14.5 oz can.
